Chump on or off?
The chump refers to the part of the leg of lamb that is attached to the centre loin (back of the lamb). It is often referred to as lamb steaks and is the most succulent part of the leg. Legs of lamb can be sold with this part (approximately 500 grams) removed or with it attached.
